Egg Bhurji - Mumbai street style

Egg bhurji is the Indian version of scrambled eggs. A quick dish with minimal ingredients that are with onion, tomato, green chilies and, few spices. This street-style recipe has few spices which are usually not added at home.

  • 1 tbspn Oil
  • 3 Eggs
  • 1 medium Onion finely chopped
  • 1 medium Tomato finely chopped
  • 2-3 Green chilies adjust as per taste
  • 1 tsp Ginger Garlic paste optional
  • 1/2 tsp Turmeric powder
  • 1 tsp Red chili powder
  • 1 tsp Garam masala powder
  • 1 tsp Butter
  • Salt to taste
  • Coriander leaves


  • Break eggs in a bowl, add a pinch of salt, and whisk for about a minute. Keep aside.
  • Heat oil in a pan. When hot, add chopped onions and saute till translucent.
  • Add ginger-garlic paste and green chillies. Saute for few seconds until the raw smell goes away.
  • Add chopped tomato and saute till they turn soft.
  • Next, add salt, turmeric powder, red chili powder, and garam masala. Cook for a minute or less. Make sure masalas do no burn.
  • Add the whisked eggs and stir to combine well with the onion-tomato masala. Cook till the eggs are just set.
  • Add butter and mix well.
  • Turn off the heat and add finely chopped coriander leaves. Enjoy hot.


The street style is a spicy dish as green chilies and other spices are added. Adjust the spice level according to your taste.
Can try with pav bhaji masala and kitchen king masala for a difference in flavors.
Do not overcook the bhurji, the texture of scrambled eggs will be dry and rubbery.
